Written by:  Tyler Blance- Produce Merchandising 159309663It’s October, and the leaves are colorful and falling off the trees!  That means it’s time for a few things; apple picking, pumpkin carving, and of course: apple cider!  Cider season is something we get pretty excited about, because we partner with a variety of different local cider mills and cider producers. In the Lebanon, New Hampshire area we’re supplied with Walhowden Orchards local cider, pressed just a few miles from our West Lebanon store!  Barb and Matt Patch are tried and true apple people: their ancestors first settled on the orchard in 1775!  Since the mid-90’s, we’ve proudly carried Walhowden cider in our Lebanon and West Lebanon stores.  If you’re ever in the area, try some.  It’s delicious! Down in rural Dallas, Pennsylvania, Brace’s Orchard has been milling cider with us since the 80’s- and we couldn’t be happier about it!  Brace’s Orchard cider is a staple in the Wilkes Barre area with roots dating back to the early 1800’s, and Larry Brace (pictured) is a cider master. Rulfs Orchard cider is a tasty treat for locals, travelers and anyone else who has the pleasure of tasting it! Celebrated on the birthday of Samuel Gee, the physician who, in 1888, made the connection between the celiac disease and diet, the day calls attention to what was once a little known autoimmune disease. When someone with celiac disease eats gluten, a protein found in grains like wheat, rye, and barley, a serious immune response occurs in the small intestine. This reaction damages the villi that line the intestine walls. When villi are inflamed, absorption of key nutrients is diminished, causing malnourishment and other ailments. Symptoms of celiac disease are incredibly varied. The National Foundation for Celiac Awareness states that there are over 300 symptoms of celiac disease. Untreated celiac disease is linked to other autoimmune diseases, osteoporosis, thyroid disease, and cancer. Blood work ordered by a physician is the first step in diagnosing the disease. Once diagnosed, a diet free from gluten remains the only cure for celiac disease. If someone with celiac consumes even the smallest amount of gluten (think: crumbs), the immune system is triggered. However, avoiding gluten doesn’t mean avoiding whole grains! Whole-grain flours, like their gluten-filled cousins, are high in fiber and contain important nutrients.  In the past, whole grain gluten-free products were tough to find and required mail order or long drives to specialty shops. This meant that many of us on a gluten-free diet stuck to the “white stuff”: rice flours and starches. Now whole grain gluten-free products are more commonly available. Sorghum, quinoa, millet, and buckwheat flours are now shelved alongside white rice flour and whole grains are included in more commercially prepared gluten-free products. Since everyone, whether they have celiac disease or not, should aim to consume three to five servings of whole grains per day, here are three ways to incorporate more whole grains into your gluten-free diet: Replace half the “white” flours in a favorite recipe with a whole grain, gluten-free flour. Over time, increase the amount to include all whole grain flours. Swap rice or potato side dishes with whole grain replacements. Sorghum resembles couscous and millet works well in place of rice. For side dishes, buy the whole grains, not flour. When you buy gluten-free pastas, breads, and snacks look for whole grain ingredients in the ingredient list. Whole Grain and Allergen-Free Chocolate Chip Cookie RecipeChocolate Chip Cookies 3 tablespoons ground flax meal 1/4 cup hot water 5 ounces (1 1/4 cups) sorghum flour 4 ounces (3/4 cup) brown rice flour 1 teaspoon baking soda 1/2 teaspoon salt 3/4 cup soy-free shortening or coconut oil 4 ounces (1/2 cup) dark brown sugar 3 1/2 ounces (1/2 cup) granulated sugar 2 teaspoons vanilla extract 12 ounces vegan and/or allergen free chocolate chips Center oven racks in middle position and preheat oven to 350°F. Line baking sheet with parchment paper. In small bowl, whisk together ground flax and hot water. Set aside. In medium bowl, whisk together sorghum flour, brown rice flour, baking soda, and salt. In bowl of stand mixer fitted with paddle attachment (or large bowl), cream together shortening and sugars on medium high speed. Cream until a thick paste forms, about 30 seconds. Add flax mixture and vanilla. Cream until mixture is light and fluffy, about 45 seconds. Stop mixer and scrape down bottom and sides of bowl. Add dry ingredients. Turn mixer on to medium speed. Mix until dough forms, about 30 seconds. Turn off mixer and add chocolate chips. Turn mixer on to low speed. Mix until chips are combined, about 15 seconds. Drop dough, about one tablespoon each, onto prepared baking sheet, about two inches apart. Bake until cookies are golden brown and aromatic, about 14 minutes. Remove pan from oven and allow cookies to cool on pan for two minutes. Using a metal spatula, transfer cookies to wire rack to cool completely. Store cookies in an airtight container for up to four days. Makes about two dozen cookies. We have local growers that supply us corn straight from the farm to various stores in New York, Pennsylvania, Vermont, Massachusetts and Connecticut, as well as our warehouse.  Additionally, we support a variety of different smaller-sized sweet corn growers, from Pennsylvania up to the northernmost sections of New York and Vermont and down into Connecticut, and each of these growers means a lot to us.  After all, we’re a business local to the Northeast, so we make it a priority to support growers (like small sweet corn growers) in the communities we’re a part of, and we’ve done so for a long time. Cherries are a classic fruit that everyone is familiar with.  When you’re shopping at your local Price Chopper this time of year, chances are you’ll find a freshly-stocked and vibrant cherry display.  I’m here to tell you a little story and give you some information on those cherries. StemiltHillCherries(2)We get our cherries from the Mathison family in Washington at Stemilt Growers- a family that was a pioneer in the cherry industry.  Stemilt is a Native American term that means “coming from the mountains”- Pretty cool!  Last week, a group of teammates from our Produce team took a trip out to visit the folks at Stemilt, located on the beautiful Stemilt Hill in Washington, to take a tour of the operation.  They were very impressed- the Mathisons have been farming the same land since 1893!  Kyle Mathison (pictured in overalls in the group photo) is a 4th generation cherry farmer whose passion in life is growing cherries.  Kyle’s cherry farming passion helps to create the beautiful, luscious cherries that you can find in your local Price Chopper!StemiltTripProduce On the nutritional end, cherries make a great snack.  Cherries are high in antioxidants and contain melatonin, which helps you maintain optimum brain function.  They’re low in fat and calories, cholesterol and sodium free, and on top of all that: they’re a great source of vitamin C and potassium. So there you have it! Next time you’re journeying through our produce department, you’ll know a little more about those beautiful cherries that catch your eye. There are lots of great recipes for cherries, but today I’d like to offer a simple, delicious way to create the classic cherry pie.  When 80’s hair band Warrant sang that oh-so-catchy “She’s My Cherry Pie,” they may have been referring to this easy and awesome recipe.
