Seafood twice per week benefits heart and mind, so I am sharing some get-you-there guidelines to make it easy.  We have highlighted these benefits by ages and stages –time to get everyone to the table for delicious, nutritious seafood. Most seafood is high in lean protein, omega 3 fatty acids and other important nutrients, like selenium. The best study showed that up to 4 tablespoons of olive oil per day helped protect from high cholesterol, high blood pressure and stroke. San Marzano tomatoes are a particular heirloom variety of tomatoes originating from the small Italian town of San Marzano sul Sarno, and have been grown since the 1700’s, when they were brought back from Peru. They have a strong, sweet taste and lower acidity than Roma’s, and make a wonderful sauce. They are so unique, they are certified by the Italian government. Lycopene, an antioxidant that also lends its red color to tomatoes, is more easily absorbed from cooked tomatoes, so these items are rich sources. Combine Price Chopper canned San Marzano tomatoes (28 oz.),  in a sauce pan with two tablespoons each of dried basil and oregano, two cloves of minced garlic, and one anchovy filet, brought to a boil, then simmer and reduce until slightly thickened (about 15 minutes).  Be sure the filet has dissolved into the sauce. I’m Lee E. French, Vice President of Seafood at Price Chopper Supermarkets, and I want to tell you about Captain Jim Flagel and the success of the American fishing industry’s effort to rebuild sustainable populations of swordfish.

Today, Captain Flagel and his White Water fishing boat are returning from the Grand Banks with a catch of swordfish expected to average close to 200 pounds each. Swordfish from the Grand Banks are the highest quality, and the White Water will only make 2 or 3 trips to the Grand Banks each year. 

Few people know of the significant sacrifices made by American swordfish fishermen to rebuild this stock in less than a decade. Rebuilding swordfish stocks is one of the great accomplishments of fishery management – and important to the success of this food source.

Swordfish is managed internationally by a number of fishing nations by quotas. For the past several years, the United States has not harvested its full North Atlantic swordfish quota. This is due in part to strict domestic management measures designed to help swordfish stocks rebuild. If the United States fails to catch its share of swordfish for a significant period, other countries can increase their quotas, and the U.S. share could be reduced.

We support our swordfish industry by purchasing their catch. Rebuilding this stock is a conservation success for America and the world, and now is a great time to buy this American-caught swordfish.

Written by Lee French, VP of Seafood Merchandising Most types of seafood benefit from the quick cooking and smoky flavor of grilling.  Make sure to keep close tabs on the process, as seafood tends to require less cooking time than meat.  Shrimp, scallops and small pieces of fish work great on kabobs which can be marinated, or not, and cooked directly on the grill.  Clams and oysters are easy to prepare on the grill and no shucking is required!  Herbs and marinades add a nice burst of flavor to most seafood.  For safety sake, do any infusing in the refrigerator – seafood should be kept cold until cooking time.  You don’t need a special basket to grill fish.  As with any grilling adventure, start with a spotless grill, add a couple tablespoons of vegetable oil to a clean kitchen cloth or paper towel.  Use tongs to rub the grate lightly with the cloth or towel, this will prevent the fish from sticking.  Most fish can be cooked right on the grate at medium heat. Herb Marinated Grilled Shrimp: The secret to grilling shrimp is to keep a close eye on them.  Shrimp cook fast enough for you to keep the lid up and an eye on them at all times.  Overcooked shrimp are rubbery so take them off the second they are done. Prep time is 10 minutes.  Cook time is 6 minutes. Total time is 16 minutes. Yield serves 6. Ingredients: –       2 pounds CMC 21-25 P&D Raw Shrimp –       ¼ cup olive oil –       ¼ cup chopped cilantro –       ½ shallot diced –       3 tablespoons lemon juice –       1 teaspoon dried basil –       1 clove garlic minced –       ½ teaspoon salt Preparation: Rinse shrimp thoroughly and pat dry and place in a resealable bag.  Mix remaining ingredients together and pour mixture over shrimp.  Seal bag and allow marinating for 2-4 hours in the refrigerator.  Preheat grill for medium-high heat.  Remove shrimp from bag and DISCARD the marinade.  Place shrimp on grill and allow cooking for 3 minutes each side.  Remove from heat and serve.  Enjoy!
