Ultimate Guide to Tailgating

Fall has begun and football season is underway. That means the return of one of our favorite pastimes, tailgating! There’s nothing like getting together with your friends, enjoying good food and cold brews, and getting amped for the big game. It’s a tradition that will never get old! Here’s our guide to the ultimate tailgate.

When it comes to tailgating, there are plenty of great options. The first is a  sub & sandwich platter. If you’re tailgating with a decent-sized group, sandwich platters are easy. They can feed the group, and they are good for bringing on the go and eating outdoors. They are fantastic for making sure everyone gets a good amount of eats. Plus, the PICS potato chips you brought to snack on are a great compliment!

The next option, grilling. If you have a dedicated griller in the group bringing your setup to the tailgate is a fun idea. Burgers, hot dogs, steak, sausage linksand more are all great options for gameday. Don’t forget the burger buns and hot dog rolls!

Now, let’s talk snacks and sides. We mentioned PICS potato chips. How about tortilla chips to dip into salsa or guac? Convenient and easy for travel. Potato salad, macaroni salad, and pasta salad containers are also nice options. They go great with grilled meats or sandwiches, and the small containers are very portable.

Can’t forget some cold beer to wash down the delicious food. For tailgating, a nice light beer such as Bud Light is a strong choice. You’ll be able to enjoy some cold ones, while keeping your head in the game. Rather than being filled up on heavier beverages. As always, make sure to drink responsibly!

The 4th of July is coming up which means we are all looking forward to the long weekend ahead. Nothing is more perfect for a long summer weekend then burgers on the grill. Salmon Burgers with Avocado & Asian Slaw: We love salmon burgers! Super underrated in the burger game. And they are excellent for the summer. These salmon burgers with avocado and Asian slaw are a refreshing meal that adds a nice twist to the traditional cookout.

Spinach-Artichoke Turkey Burgers: A good turkey burger is packed with flavor. These Spinach-Artichoke Turkey Burgers certainly fit the bill. A fantastic flavor combination that will unlock a new level of burger lover in your heart and mouth!

Portobello Caprese Burgers: Portobello mushrooms make for a great burger, and this isn’t the last time you’ll hear from them in this list! Top with tomato, mozzarella cheese, and balsamic vinegar and you’ll have a caprese experience like you’ve never seen it before.

Italian Meatball Sliders: We’re about halfway through the list so time to switch it up. Sliders! Sliders are great and a fun alternative to a whole burger. Try out these Italian Meatball Sliders and you’ll pick up what we’re putting down.

Aloha Burgers: Say Aloha to this top tier burger recipe! Pineapple, red onion, jalapeño, teriyaki sauce, and more unite for an epic tropical burger experience.

Grilled Portobello Mushroom Burgers: We told you we’d be back. Throw a Portobello patty on the grill, add some A! sauce, mayo, white onion, avocado, you’re good to go!

Cobb Burgers: You’ve probably heard of egg on a burger, but you may have not taken the leap yet. Do it! We promise you won’t regret it. This recipe is a great place to start. Classic burger toppings alongside eggs, blue cheese, roasted reds, and avocado, so delicious!

Smoky Turkey Burger with Smashed Avocado and Black Bean Salsa: And last but not least, another refreshing turkey burger option. Smashed avocado and black bean salsa for a southwest style feel on this one. Amazing flavor, amazing burger!

Top Dogs for the 4th

It’s the heart of summer and the 4th of July is coming up. There’s no better time to fire up the grill for some hot dogs. This year, we are striving for variety. Not just your average hot dog, but some recipes to elevate your dogs to the next level. BLT Dogs, Chicago Dogs, Chili Dogs, we’ve got them all. Check out these great recipes for yourself!

L.A. Street Dogs: These LA Street Dogs encompass all the flavorful qualities of a Los Angeles style dog. Turkey franks accompanied by an adventurous team of bacon, pico de gallo, salsa con queso, and pinto beans. What’s not to love?

The Chicago Dog: A Chicago-style hot dog, or simply Chicago Dog, features a 100% beef frankfurter with a poppyseed bun. Topped with yellow mustard, chopped onion, fresh tomatoes, green relish, pickled sport peppers, celery salt and a whole dill pickle spear. It’s busy but absolutely delicious.

Chipotle Chili Dog: Turn up the heat a notch with a Chipotle Chili Dog. Add a little ground beef, chopped onion, garlic, tomato sauce, and minced chipotle peppers in adobo sauce. Don’t forget to finish It off with some shredded cheddar cheese and green onions.

Nacho Tater Tot Dog: Try this combination with a veggie dog. Tater tots, nacho cheese, and pickled jalapenos, great flavor and easy to put together.

Thai-Style Dog: This Thai-inspired recipe features cabbage, cucumber, and grated carrots in a sweet vinaigrette. Use turkey dogs, topped with the veggie mixture, a spicy Asian aioli, and chopped peanuts for a Thai food experience unlike any other.

Macaroni & Cheese Dogs: Next time you have a cookout put out some mac & cheese and have your guests put it on their hot dogs. Excellent comfort food!

Pulled Pork & Coleslaw Dog: If you’re feeling extra adventurous throw some pulled pork on top of your hot dog. Add some coleslaw for a creamy compliment. Make them as a great menu enhancer for summer get togethers.

Basil Pesto Dogs: With bunches of basil, pesto is easy to make. Spread some onto your hot dog for a simple yet refreshing choice of condiment.

Buffalo Dog: A buffalo dog? Yes, please. Buffalo wing sauce, a little ranch, crumbled blue cheese, chives, scallions, and refreshing celery. This is a great option if you like your dogs a bit hotter.

BLT Dogs: BLT’s are a classic sandwich. We think they are a classic hot dog as well. Shredded lettuce, chopped tomatoes bacon, and a drizzle ranch, all coming together for one delicious dog.

Vegan Dogs: Finally, vegan dogs. If you don’t eat meat don’t fret, there are great options for you as well. Check out this great recipe from the Cheeky Chickpea. The best part is you can enjoy all of these toppings vegan-style as well.

Build Your Own Burger Toppings

Break out the buns and fire up the grill, it’s National Cheeseburger Day! Today we celebrate a classic meal that is near and dear to our hearts. The best thing about cheeseburgers, you can always build your own, stacked high with your favorite toppings. You can stick with your go-to or switch it up each time. Personally, we like to be creative and switch it up. Check out some of our favorite build your own burger toppings!

Chiles: If you’re like us, you love a little kick to your food. Chiles elevate any good burger with great heat and flavor.

Mushrooms: Grilled of sauteed mushrooms make a great addition to your cheeseburger. We recommend using swiss cheese as it works as the best complement.

Avocados: Avocados are creamy and delicious, plus they make your burger more filling. More satisfying, tastier, why wouldn’t you add avocado?

LTO: LTO aka lettuce, tomato, onion. Sometimes you’re in the mood for a good old fashioned, classic cheeseburger. A little LTO will get you there.

Coleslaw: Coleslaw is commonly viewed as a side dish. But who needs a side dish when you can just add it to your cheeseburger?

Pineapple: Give your cheeseburger a more tropical feel by adding pineapple. Throw some BBQ sauce for a top-notch burger combination.

Maple Syrup: Maple syrup is good with bacon. Bacon is good on cheeseburgers. Therefore, maple syrup must be awesome on bacon-topped cheeseburgers. It’s simple science.

Fried Egg: If you’re in the mood for something extra, add some fried egg to your cheeseburger. We like to save this one for special occasions.

Mac & Cheese: It is a cheeseburger after all, make it extra cheesy and extra delicious.

Kettle Chips: Another side dish that is sometimes better off just on the burger. We prefer kettle chips over regular potato chips for the extra crunch factor.

Hummus: Hummus brings a little swagger to your cheeseburger. Brings more flavor and a Mediterranean flair to the plate.

Fried Green Tomatoes: Replace the old red tomatoes with some southern-style, bold fried green tomatoes. Crunchy and tangy these are top tier in our book.

Goose Island Lost Palate Hazy IPA. Juicy. Hazy. Mango(y).

Lost Palate is dedicated to Jonny, a long time Goose Island employee. Jonny, and brewer Quinn, ideated this recipe after Jonny’s recent victorious battle with cancer. The recipe was inspired after Jonny lost the ability to taste many flavors, an unfortunate consequence of battling cancer. He almost completely lost his palate and mangos and cinnamon were two of the few things he was still able to taste. We’re happy to say that Jonny is now a cancer survivor! This beer pays tribute to the flavors that were never lost.

Serves: 4

 

Ingredients:

  • 4 (2 ounce) Chicken cutlets
  • 4 Pineapple rings
  • 4 ounces Jerk chicken seasoning
  • 4 ounces Jerk chicken sauce
  • 8 ounces Coleslaw

Preparation:

  • Step 1: Rub raw chicken with Seasoning or Rub
  • Step 2: Grill chicken while basting with Jerk Chicken Sauce until done
  • Step 3: Grill Pineapple Rings
  • Step 4: Make or Purchase Coleslaw
  • Step 5: To assemble the sliders, place slider buns on plate with both sides open faced
  • Step 6: Place Jerk Chicken on the Heel Bun, then top Jerk Chicken with Coleslaw
  • Step 7: Place Grilled Pineapple slice on top of Coleslaw
  • Step 8: Place Crown Bun on top of Pineapple
