The year is flying, but with every month I get to release new recipes at the Price Chopper/Market 32 Kids Cooking Club! Sharing new, and easy, flavor combos is one of my favorite things to do.

What’s on the menu this month?  More yummy goodness!

  • • Mint Chocolate Fake Shake
      •           A great way to add in spinach that can be tasted!
  • • Cauliflower Nuggets
    •           A delicious snack or side dish the kids will love!
  • • Chocolate – Peanut Butter Pudding
    •           A surprisingly delicious dessert with avocado you can’t taste!

Mint Chocolate Fake Shake

2 cups fresh baby leaf spinach

2 cups fat-free vanilla frozen yogurt

1 ½ cups PICS low fat milk

1 tablespoon PICS unsweetened cocoa powder

1 tablespoon PICS honey

1 – 2 drops mint extract

 

Measure and add the spinach, vanilla frozen yogurt, low fat milk, cocoa powder, honey and mint extract into the blender pitcher.  Blend and serve!

Dairy Allergies?

  • • Replace the milk with coconut milk or your other favorite dairy alternative. Always choose based on    your own dietary needs.
  • • Replace the frozen yogurt with a frozen dairy free vanilla alternative based on your dietary needs.

More on the Mint Extract:  Use a clean eyedropper that’s purchased solely for kitchen purposes to add a couple of drops of extract.  Mint extract is delicious, but it can be strong.

Cauliflower Nuggets

1 large head cauliflower

2 cups PICS seasoned breadcrumbs

2 teaspoons PICS onion powder

1 teaspoon Full Circle organic turmeric

1 teaspoon sea salt

½ teaspoon PICS garlic powder

½ teaspoon dry mustard

3 PICS eggs

¼ cup PICS milk

PICS nonstick canola cooking oil

 

Preheat the oven to 450 degrees F.

 

Wash the cauliflower and cut it into small florets and place them in a bowl. 

Stir the breadcrumbs, onion powder, turmeric, sea salt, garlic powder and dry mustard together.  Set aside.

Coat a nonstick baking sheet with a heavy coat of the nonstick cooking spray.

Using a hand whisk, whisk together the eggs and milk in a bowl.  Pour the mixture over the florets and stir until they are fully coated. 

Dredge the coated cauliflower florets in the breadcrumb mixture.  Place the breaded florets on the coated baking sheet.  Once they are all on there, spray a light coat of canola oil on them.   Bake for 20 minutes until the cauliflower is soft and the outside is browned.

Serve with your favorite low/no sugar condiments.

Chocolate Peanut Butter Pudding

1 avocado

1 banana

¼ cup PICS unsweetened cocoa powder

¼ cup PICS peanut butter

¼ cup vanilla coconut milk

¼ cup PICS honey

2 teaspoons PICS vanilla extract

 

Remove the avocado from the skin and discard the seed in the center.  Place the avocado in the blender.

Peel the banana and add the peeled banana to the blender.

Add the cocoa powder, peanut butter, coconut milk, honey and vanilla extract to the blender.   Blend and serve!

Nut allergies?

  • Replace the peanut butter with WOWButter®, which can be found in the allergy friendly aisle at your Price Chopper/Market 32 Supermarkets.
  • Replace the coconut milk with milk, low fat cream or another substitute based on your dietary needs.
