Meal 1: Eggs Benedict

Starting Mom’s Day in a very special way!

Eggs Benedict is a “big deal” meal for many, a classic brunch beauty that is saved for special days and savored for how it transforms humble ingredients into a culinary celebration. Our step-by-step recipe makes it easy to bring it home without having to bring the chef!

The key to success is preparation: the muffin, ham and extras like fresh fruit are done first, then the sauce, and finally the eggs. We have laid it out here to ensure you can whisk it right to Mom while warm and wonderful!

Essentials:

At least two sturdy, microwave safe coffee mugs (one clean cup per each egg cooked)

1 medium sauté pan (optional if you will sauté the Market32 ham before assembling the egg, muffin and sauce)

1 small saucepan

1 small whisk or a spoon to stir and serve the PICS Hollandaise sauce,

Measuring cups

Slotted spoon (that will fit into the mugs to remove the poached eggs)

Small plate or Simply Done plastic wrap,

Oven safe plate

Simply Done Aluminum Foil

Butter knife

Tablespoon

Pantry:

PICS Vegetable Oil Spray

Butter (room temperature for easy spreading)

Ready…..

Preheat oven to the lowest setting, “Warm” or 200 degrees F.

Make the coffee or set up the mimosa bar. Set up the number of serving plates needed for your family near the stove or cooking area. If you are serving fresh fruit with the Eggs Benedict, portion that out on the plates.

Split the English Muffins and set them by the toaster. Each person should have both halves of the muffin as the base and will have a poached egg on each one. Smaller children may only need one half.

Place eggs by the microwave, with the mugs. Measure ½ -3/4 cup of water and place in each mug.

Set…..

Place Market 32 Off the Bone ham slices on a plate. Cut each slice in half – this ensures you can fit the ham on the muffin and its a flat surface that will keep the egg in place. Optional prep:  Spray the sauté pan with PICS Vegetable Spray, set on low heat on a burner. Briefly brown the ham slices to warm and add flavor. You can hold the ham and toasted, buttered muffins on the oven-safe plate in the oven while cooking the other ingredients.

Start toasting the English muffins. Older children can help and can butter them when ready. Place the toasted, buttered muffins next to the ham on the plate in the oven. Cover the plate lightly with foil. They can also set up the mugs with the ¾ cup of water near the microwave. Younger children can put napkins on the table. Move the plates for the finished muffins to the other side of the microwave.

Go! Crunch time! You cook the sauce and poach the eggs at the same time. Mom should be at the table, (perhaps escorted there by your helpers) with her beverage, enjoying the show (and the knowledge that she isn’t cleaning up either. 😊)

Hollandaise sauce – follow directions on the package for the PICS Hollandaise Sauce, whisking in the small saucepan. When it is almost done, take the plate with warm ham and muffins out, and set near the stove so you can poach eggs and assemble the Eggs Benedict quickly and easily.

Microwave poached eggs – super easy, and easy clean up!

These steps are quick – have each plate ready with the warm muffin and ham set up and ready to place each poached egg and two tablespoons of sauce.

Place one microwave-safe coffee mug with water in the microwave. Microwave the mug/water on high for 45 seconds. Water should be steaming but not boiling. Crack the egg into the hot water. Place a small clean plate on the mug (or cover with cling wrap). Return to the microwave and cook for 45 seconds. Due to the different levels of power in microwaves, plan on experimenting with the first egg. SAFETY TIP – sometimes eggs explode when the plate or wrap are removed – keep your face away from the top of the cup during this step for each egg. Children may want to “see”; consider having them already at the table, or waiting at the kitchen door to ensure you can prep and finish safely. Check the egg for desired doneness – whites should be completely cooked, and the yolk should be tender and gooey. If it is not quite ready, return the mug to the microwave for 10 seconds, and/or leave the plate on the cup for 10 more seconds. Use the slotted spoon to lift the eggs out and drain the water at the same time. Place the poached egg on the ham, and top with warm Hollandaise. So special! Enjoy!

Meal 2: Surf & Turf

Surf and Turf – a great way to end a special day!

This fantastic dinner is simple but delivers all the special you want to put into Mom’s day. The top sirloin steak on sale can be subbed for the ribeye in this recipe, with a couple of tips to ensure it is tender and awesome! Marinate with Italian dressing, and broil to seal in the juices and tenderness. Slice it thin and consider topping with some garlic butter for an unctuous extra touch. Prepare the fresh green beans in a shallow, wide saucepan – steam or boil until they are tender, and top with butter for a wonderful side. The parmesan Market 32 shrimp are the crowning glory for this amazing entrée!

Julz Carden has been with the company since July of 2023. She has a bubbly and easy-going personality and is always willing to help out in difficult situations. In fact, she has certain guests that look for her specifically to cash out their groceries. Two things Julz likes about this company are the growth opportunities that we have to offer and how you can be anything you want to be as long as you keep your mind open and are working toward that goal.

Jarrett started as a part time produce clerk in Altamont Ave. In September of 2022, he became the Assistant Team Lead in Guilderland. From there, he became a temporary produce manager in August of 2022. He just continues to grow as a person and a manager! 

When discussing his career at Price Chopper/Market 32, Jarrett stated, “I love what I do everyday and I like a challenge. I take pride in my work and enjoy making the department look amazing!”

Marilez M. is our bakery rockstar at Altamont Ave. Marilez has been with Market 32 for seven years. The team loves to work with her because she always comes to work with a positive attitude and she is ready to work together every day. Marilez is a friend to everyone around her, especially the our guests. Customers love that she is so helpful and knowledgeable and describe her as having the “sweetest smile.” Her favorite part of her day is knowing the customers are leaving happy and looking forward to seeing her again.

Bill has been with the company for 19 years and has worked in a few of the Albany stores over the years. He is such a friendly individual who is always ready to work and loves to be helpful. Henry Pipino

Clifton Park Plaza Market 32

Henry started his journey with Market 32 on January 1st, 2023. He was a regular here for lunch and one day ended up talking with our hiring manager who hired him on the spot! He landed in the seafood department where he’s learned the ins and outs and great customer service. A few things Henry loves are the customers, teammates, cleanliness and the convenience of the store being local to his home. He is one of our hardest workers and even picks up shifts in Deli, Produce and Meat Department when he has some extra time to help on his days off. Henry has aspirations of becoming a manager in the seafood department, and with his work ethic he will make it there in no time. He is a great teammate and someone who the team can rely on if we ever need anything. Co-Manager Nick Larose states, “Since I became the Co-Manager here at Market 32 store #250, Henry and I have become great friends and talk regularly whenever we see each other. He is a stellar teammate who has never missed a day and is always in a great mood when he comes in, which rubs off on the rest of the team to make a great work environment.”

Johnstown Price Chopper

Dominic has been working with us since April of 2019.  He first started in Produce and has since moved into the Grocery department doing various jobs.  Dom is the type of person who can always put a smile on your face and customers look for him daily.  He worked for us back in 1975 as a part time cashier and left to pursue another career, but found his way back to us, he says “he wished he never left”.  

Aubrey King

Glenville Market 32

Aubrey King is a Sales and Service Team Leader in #38 Glenville and has been with Price Chopper/ Market 32 for 20 years. The thing Aubrey enjoys most about working at Price Chopper is the relationships that she has developed with her fellow teammates and customers. Part of Aubrey’s job currently as Sales and Service Leader (SSL) is to hire new talent for the store and she is the welcoming face for all new teammates. Aubrey loves training new teammates and making them feel welcomed in their new roles.

We are very lucky to have Aubrey working in this building- Aubrey’s catch phrase for the whole store is, “Shine Bright Like a Diamond” and Aubrey sure does just that!

Misty Parkis is a part time food service teammate in #38 Glenville. Misty has been with the company for 5 years. Misty says that she enjoys working for the company and says that working with the right team and supportive management you can thrive and grow as a person and employee. History

Vitamin C Day was started in 2019 by a skincare company (Skinceuticals ®), when their scientists showed that some Vitamin C can be absorbed by the skin. This is an important find, as Vitamin C is a key nutrient for skin health and production of collagen, a structural protein found in all connective tissues in our bodies. Vitamin C (ascorbic acid) is an essential nutrient – essential means it must be obtained by eating and drinking because humans cannot make it. Vitamin C is important to many body systems, and research is always reaching to better define roles and mechanisms, especially for preventive health efforts like reducing incidence of cancer or heart disease.

Natural Sources

Vitamin C is found in multiple foods, including all citrus fruits, bell peppers, tomatoes, potatoes, strawberries, and cruciferous vegetables including broccoli, cabbage, cauliflower, and Brussels sprouts. Many foods are fortified with Vitamin C, and it may also be a functional ingredient that maintains freshness. It is so commonly available in foods typically eaten by Americans; it is rare to find a deficiency. It was long recognized that citrus fruits contained a substance that prevented scurvy, a disease that killed sailors from the 1500-1800’s, but the nutrient was not actually identified until 1932.

Supplements

Many people increase their intake of Vitamin C via foods and supplements to ward off chronic health issues, or perhaps when a cold is coming on. In the 1970’s, Linus Pawling, a scientist, and proponent of mega dosing Vitamin C, recommended the equivalent of 12-24 oranges, to support overall health. Vitamin C is a water-soluble vitamin, which means our bodies do not store it well. Due largely to Dr. Pawling’s recommendations, it was not uncommon for people to take high potency supplements of 1000 mg or more, but that is rarely recommended now. In fact, though well-recognized as an antioxidant, at very high levels it can become damaging to cells.

Current Guidelines

The Recommended Daily Amount for adults 19 and older is 90 mg for men and 75 for women. Children’s needs are lower and defined by age and stage of growth. High intake over time results in lower absorption once the body’s limited stores are maxed out. Though it is not toxic, the Tolerable Upper Limit (the maximum amount generally recognized will not cause harm) is 2000 mg per day. Excessive Vitamin C can result in nausea and other GI issues. High, excessive intake of Vitamin C can backfire if it is suddenly stopped – a person that pivots from excess to none can develop rebound scurvy. Despite prevalent belief that Vitamin C can prevent colds, research has so far shown limited benefit, though it may be helpful to reduce virus duration. 

Food First

Ensuring you get enough Vitamin C is a great motivator for eating more fruits and vegetables, preferably often over the course of the day. The benefits of eating more produce stack up as other nutrients come along for the ride, such as Vitamin A, fiber, bioactive substances (polyphenols) and water. Vitamin C enhances absorption of iron, which is important to children, pregnant women, and anyone with malabsorption due to intestinal issues or perhaps even a medication interaction. To get the best food benefit, pair higher iron foods, like cooked, unprocessed red meats, legumes, and iron-fortified foods with foods high in Vitamin C to enhance natural absorption of iron. Despite prevalent belief that Vitamin C can prevent colds, research has so far shown limited benefit, though it may be helpful to reduce virus duration.  

Best Practices

Enjoy a wide variety of fruits and vegetables – the more you eat, the more likely you are to meet the RDA without a supplement. If you are concerned, ask your health care provider or registered dietitian-nutritionist to assess if you would benefit from a supplement and why, as well as ensuring there are no concerns about current medication/supplement interactions by sharing supplement information with your pharmacist. If supplements are needed, keep them lower dose and consider using every other day. The RDA is based on a weekly average – you are sure to get some Vitamin C most days and can fill in gaps with moderate supplementation.

Carving a Ham: The Basics 

For some, carving a ham may seem like a daunting task. However, once you get the hang of it, it isn’t all that bad. A ham is only made up of three bones: the shank at one end, the femur in the middle, and the angled bone in the butt called the aitch bone. These three bones don’t have to be intimidating, so don’t let them come between you and a beautiful, juicy bone-in ham.

Carving Whole Bone-In Ham

With different hams come different carving strategies. Let’s start with a whole bone-in ham.

Begin with the shank or lower leg to the carver’s right, steady the ham with a fork and locate the notch where the aitch bone sits. Cut through the ham alongside the aitch bone until reaching the femur (center bone). Make a similar cut on the opposite end of the ham just before the shank. Then carve out the meat between the two slices by cutting along the femur.

Place the freshly removed large chunk of ham on its flat side. Then make perpendicular slices to where the ham previously met the center bone, cutting meat across the grain for maximum tenderness.

Remove additional boneless pieces for carving by cutting along both sides of the center bone.

Steps to carving a Whole Bone-In Ham

Carving Shank Half or Portion Ham

Begin with the thicker piece of meat on the top, use a fork to steady the ham and cut along the top of the bone to loosen the boneless meat.

Place the meat carved-side down on the cutting board and cut across the grain of the meat in perpendicular slices. Transfer slices to a serving platter.

Turn the remaining meat carved-side down and remove the large boneless sections. Place boneless sections, as they’re removed, on the cutting board and cut in perpendicular slices. By cutting perpendicular slices across the grain of the meat, you will maximize the tenderness of the ham.

Steps to carving a Shank Half or Portion Ham

Place pre-cut side of ham down on the cutting board. Carve along the bone to remove boneless section of meat.

Slice boneless section across the grain and transfer to a serving platter.

To carve the remaining meat from the bone, insert fork into meat next to bone and make horizontal slices towards the bone as shown. Transfer slices to a serving platter.

History of Irish Soda Bread on St. Patrick's Day

We love a good St. Patrick’s Day dinner. Corned beef, cabbage, a Guinness or two. It’s perfect. But next to those big players sits another staple of the meal, Irish soda bread. Without a good soda bread your Irish feast is incomplete, it’s an essential side dish and this year we want to put a bigger focus on it. Let’s learn about the history of Irish soda bread and how it became associated with the holiday.

The first documented people to enjoy soda bread were the American Indians. They used pearl ash, a natural form of soda created from the ashes of wood, to make their bread without yeast. However, this practice became known worldwide when the Irish discovered and replicated it. And although its heavily associated with St. Patrick’s Day, Saint Patty himself was around well before soda bread was well-known.

Irish soda bread was first created in the 1830s, when baking soda was first introduced to the UK. At the time, Ireland was facing financial hardship and lack of resources, so they turned to soda bread out of neccessity, it was inexpensive and required few ingredients. Wheat flour, baking soda, salt, and soured milk was all they needed. Even Irish families who lived in the most isolated parts of the country could gather the ingredients to make soda bread. At the time, many of the lower class in these remote areas did not have oven access, so they used iron pot and griddles over open hearths. A unique cooking method that gave soda bread its dense texture, hard crust, and slight sourness.

Despite its humble beginnings, Irish soda bread has become a large part of the typical St. Patrick’s Day feast and plays a major role in Ireland’s culinary history. Pick up your own loaf of Market 32 Irish Soda Bread online or at your local store.

There are a few weeks of the year when you know what you will be having for dinner, and in my family, this is one of those weeks!  The ingredients are well-known and on sale this week, so classic this meal would almost make itself, if you don’t have a family recipe or a friend who always makes enough for the neighborhood. I, of course, have the best recipe – my Aunt Sheila’s, written down about 25 years ago on a now slightly crumpled, “well-seasoned” piece of paper. The ink is smudged, splashed by something at some time but rescued and dried and saved in the recipe box every year since.  

Planning this blog got me thinking about meal traditions, how they connect us generationally and how they are reinvented over time – cooked in different pots and ovens, with spices or not, braised and baked and boiled – how many ways can this meal be made? Then I googled “Corned Beef and Cabbage” and got this: About 46,900,000 results! 

That is impressive! As I scrolled through, the descriptions told the story of its travels over time -Grandma’s, Mom’s, Dad’s, slow cooker, Southern-style, Instant Pot, and more. Top 40 recipe collections for every food magazine or cooking show, fancy, saucy, and crispy. The corned beef and cabbage meal tradition we know in America has roots in Ireland, but was reinvented and expanded in New York City, when the migration of Irish to America exploded in the late 1800’s, and the community connection of Irish and Jewish residents in neighborhoods with kosher butchers restored access and enjoyment to this iconic meal. *

  1. Tip – Cook both briskets/roasts at once and store the second wrapped in the refrigerator for the Reuben Sandwich meal. For best results, do not slice the second roast until you are preparing the sandwiches.
  2. Hack – When the brisket is done according to your recipe, wrap it in foil and place in a small cooler or in an oven set on 150 degrees to rest and redistribute juices into the meat. Rest for at least 45 minutes, ideally up to 2 hours, checking to be sure the internal temperature doesn’t go below 140 degrees. When you are ready to serve, be sure to slice against the grain, or the meat will shred into a stringy (but still delicious) pile versus a juicy, servable slice.

Meal 2: Grilled Reuben Sandwich (or Panini!)

The Reuben is a classic – juicy, savory and succulent, it is an icon by itself. It is also easy to prepare if you already cooked the corned beef.

  1. From the pantry – PICS Thousand Island Dressing and PICS Unsalted Butter, softened.
  2. Utensils – Sharp chef’s knife, large, flat spatula for turning the sandwich, fork or tongs for the sauerkraut.
  3. Prepare a large frying pan with a flat base or a griddle with a spray of PICS Vegetable Oil. Keep a large pot top available to assist with heating the sandwiches and ensuring the cheese melts.
  4. Hack – warm canned PICS sauerkraut in a saucepan. Keep a large fork or tongs handy to place kraut on the sandwich.
  5. Slice the brisket against the grain, into thin slices.

Set up your sandwich ingredients – sliced rye bread, sliced corned beef, warmed sauerkraut, sliced Swiss cheese, dressing and butter. When you are ready to assemble, turn the burner heat to low-medium for the pan or griddle.

  1. Place 4 slices of rye bread on a counter or cutting board and spread 1 TBSP PICS Thousand Island Dressing on one side.
  2. Place a slice of Swiss Cheese on the dressing.
  3. Using the fork or tongs, place warmed, drained kraut (hold over the pot to drain for a few seconds) on the cheese.
  4. Place several slices of corned beef on the sauerkraut.
  5. Take the top slice of bread and spread 1 TBSP of PICS Thousand Island Dressing on one side. Place the dressing-side down on the sandwich.
  6. Butter the top side of the sandwich bread.
  7. Repeat the procedure for all 4 sandwiches.

When you are ready to grill, place some butter in the pan to melt. Carefully transfer the 4 sandwiches to the pan. Place the pot top over the sandwiches or pan to concentrate the heat and melt the cheese. Grill until golden brown on both sides, flipping the sandwiches after 3- 4 minutes. Serve with pickles, Cole slaw and LOTS of napkins!  Enjoy!
