🍗 Chicken Parm Sandwiches
Makes: 4–6 sandwiches
Ingredients
Chicken breasts, cutlets, or tenders
1 cup Pics breadcrumbs
1 cup Pics pasta sauce
1–2 cups shredded cheese
Hoagie rolls
Salt & pepper, if you have them
Oil for cooking
Optional: Italian seasoning, garlic powder, Parmesan
Directions
Prepare the chicken: If using chicken breasts, pound them to about ½-inch thick. Season with salt, pepper, and Italian seasoning if available.
Bread the chicken: Put breadcrumbs in a shallow bowl. Coat each piece of chicken thoroughly in the breadcrumbs.
If you have an egg, dip the chicken in beaten egg first, then breadcrumbs. If not, you can lightly moisten the chicken with water or milk so the crumbs stick.Cook the chicken: Heat a thin layer of oil in a skillet over medium heat. Cook chicken for about 4–6 minutes per side, depending on thickness, until golden brown and the center reaches 165°F.
Add sauce and cheese: Spoon pasta sauce over each piece of chicken and sprinkle generously with shredded cheese. Cover the skillet for 1–2 minutes until the cheese melts. You can also put them under the broiler briefly.
Toast the rolls: Split the hoagie rolls and toast them in the oven or skillet until lightly crisp.

🧀 Buffalo Chicken Mac & Cheese
Serves: 4–6
Ingredients
Chicken breasts, cutlets, or tenders
12–16 oz Pics pasta
2 bags shredded cheese (16 oz total)
Pics Buffalo wing sauce
Pics breadcrumbs
Celery
Salt & pepper, if you have them
Oil for cooking
Directions
Cook the pasta: Boil the pasta according to the package directions. Drain and set aside.
Cook the chicken: Cut the chicken into small bite-sized pieces. Season with salt and pepper. Cook in a large skillet with a little oil over medium heat until fully cooked and the center reaches 165°F.
Add Buffalo sauce: Pour about ½ cup Buffalo sauce over the cooked chicken and stir until coated. Add more if you like it spicy.
Make the mac & cheese: Lower the heat. Add the cooked pasta to the skillet with the chicken. Stir in about 1½ bags of shredded cheese until melted and creamy. If it seems too thick, add a splash of milk or pasta water if you have some.
Make the topping: Transfer everything to a baking dish. Sprinkle the remaining cheese over the top, followed by a light layer of breadcrumbs.
Bake: Bake at 400°F for about 10–15 minutes, until the cheese is melted and the breadcrumbs are golden.
Add celery: Chop the celery into small pieces and serve it on top or on the side for some crunch.
