True Brew is the perfect read for any craft beer enthusiast in the Capital Region and beyond. Through their magazine, True Brew showcases hidden gems, digs deeper into popular breweries, and keeps tabs on new openings, allowing local craft beer fans to stay in the loop throughout the year.

In this month’s edition, True Brew travels to Schenectady’s Frog Alley Brewing Co. where author Erik Budrakey provides an informative, in-depth look into downtown’s hopping new destination. You’ll learn more about the location, the business, and even the master brewers behind the Frog Alley lineup. We can’t wait to check the place out ourselves!

True Brew also took a moment to catch up with Christian Weber, co-founder of Common Roots Brewery in South Glens Falls. Weber answers a variety of questions, ranging from how Common Roots was able to overcome recent adversity from a brewery fire in March to his passions outside of the brewery.  

True Brew concludes their first publication of the year with craft beer predictions for 2020. Using data from recent years, George Di Piro paints the picture of what he believes the industry will look like given where the momentum is currently. Everyone loves a good pizza, but sometimes you’re in the mood for something different. What if you have pizza dough at home, but don’t necessarily want pizza? There are more ways to put it to use than you might think. Check out these ten ways to use pizza dough, outside of pizza!

10 Ways (Besides Pizza) to Use Pizza Dough

1. Calzones: At the end of the day, calzones are something like an inside out pizza. Crispy dough filled with cheese, sauce, meat, and all your favorite toppings. Delicious!

2. Doughnuts: On some occasions, pizza is eaten for breakfast, and it’s a topic of much debate. However, it’s a fact that the dough is great for making morning doughnuts. Making doughnuts with pizza dough will give you a slightly denser doughnut, but it will certainly do the trick!

3. Breadsticks: Thin and crispy breadsticks are very easy to make with pizza dough. When rolling out the dough, rub a light coating of olive oil on the countertop or in your hands. Roll the dough into long, skinny sticks, and place in the oven at 400F for 10-15 minutes.

4. Cheese Sticks: Cheese sticks are a great alternative to a whole pizza. Simply press the dough into 8-inch squares and brush the top with oil. Sprinkle cheese and some Italian seasoning to finish it off. Finally, bake for 6-8 minutes or until cheese is lightly browned.

5. Pot Pie: Use pizza dough as the crust in your favorite pot pie. The best thing about pot pie is that you can throw almost anything you want in. Meats, vegetables, whatever you choose and you’re good to go.

6. Crackers: Crackers made from pizza dough make for a great snack. They are delicious and easy to make. Just make sure your dough is rolled as thin as possible.

7. Dumplings: There are many different styles of dumplings. Did you know that you can use pizza dough to make them? Pizza dough works great for making fluffy dumplings and even for the flatter, Southern-style variation.

8. Pigs in a Blanket: Pigs in a blanket is the name given to any type of mini hot dog or sausage wrapped in dough. Try it with pizza dough!

9. Pinwheels: Pinwheels make for a great gameday snack and there are a number of ways they can be prepared. Use pizza dough, cheese, chicken or bacon (or both), and some shredded zucchini or spinach.

10. Fruit and Cheese Bakes: Essentially a fruit tart, fruit and cheese bakes can be made with pizza dough. Spread some cottage cheese on the dough, add your favorite fruits like apples and pears, and bake. It’s that easy!

Our January home.grown. Brewer of the Month: Paradox Brewery

We love all things local, and one of our favorite sectors of local food is local beer. There are so many different brews, flavors, and styles, and so many stories to tell! That’s why we’ve embarked on an exciting home.grown. adventure: to bring you fresh craft beer stories each month from our Northeast region. Our region is home to some of the best craft breweries in the world, and we’re telling their stories to our craft beer fanatics here on our blog.

Up next: Paradox Brewery!

This month we’re back for another round at Paradox Brewery. Last February we introduced some of our favorite Paradox brews here on our blog, this month we return to talk about their awesome new facility!  

Paul and Joan Mrocka opened Paradox Brewery six years ago, now after years of hard work they have a new brewery in North Hudson, just a few miles north of the old Schroon Lake location. The new location will allow Paradox to quadruple its output, and move everything on site. Inside, the brewery will be full of modern, highly efficient equipment, while a wraparound deck on the outside will provide guests with a gorgeous view of the mountains. Paradox even has a plan for food trucks to be a part of the atmosphere in the future. Yum!

Stop in to the new Paradox location, where you can enjoy the same quality brews in a new and improved environment. Paradox Pilsner is still a Paradox fan favorite as a light, crisp and refreshing drink. While, Beaver Bite IPA remains a top seller, alongside its juicy, double IPA sibling Beaver Overbite.

Each year millions of eyes are simultaneously fixated on the Waterford Crystal at Times Square New Year’s Eve Ball. At 11:59 pm on December 31st, the ball begins it’s highly anticipated descend. Families, friends and strangers alike unite in a countdown to a New Year, full of fresh optimism, new hopes, and stress-free grocery shopping. 

It’s a cool tradition: That moment of unity and refreshed hope is a fun way to begin a new chapter. But how did it come to be? As we often do here on our blog, we went back into history to find out.

New Year’s Eve was first celebrated in Times Square in 1904, but it wasn’t until 1907 that the ball made its first appearance. The original ball was a hefty 700-pound mass made of iron and wood. It was built by a young immigrant metalworker named Jacob Starr, his company, Artkraft Strauss, was responsible for lowering the ball. Since it’s inauguration in 1907, that ball has undergone seven design changes before becoming what it is today.

After a successful introduction, 1942 and 1943 are the only two years since that the ball has not been lowered, as a wartime “dimout” of lights in New York City had the celebration on hiatus. Nevertheless, the crowds still gathered in Times Square those two years. Introducing the New Year with a minute of silence, followed by the ringing of chimes from sound trucks.

As for the Times Square location, the first shindig was to commemorate the new headquarters of the New York Times. Adolph Ochs, the newspaper’s owner successfully lobbied for the city to rename Longacre Square, Times Square. The Times Tower became the focus of the city’s New Year’s gathering.

Ochs went all out, sparing no expense to ensure the celebration was a success. An all-day street festival led to a nighttime fireworks display, finished off at midnight when sounds of noise-makers and rattlers erupted through the streets. The entire party was a rousing success, and Times Square effectively became the place to be for New Year’s Eve.

Two years later, the city banned Ochs’ fireworks display. Yet, he remained unfazed, replacing the light show with the first New Year’s Eve ball built by Jacob Starr. The rest is history as the Times Square New Year’s Eve celebration began capturing the imagination of the nation, and eventually the rest of the world.

Have you tried our new Everything Bagel spice blend? We’re putting it on everything. There are tons of ways to enjoy it, so we decided to put together a few of our favorites for you to try out for yourself! Here’s a baker’s dozen.

Rub it on Roast Meat: Everything bagel seasoning makes for a tasty rub: Try it on roast meat or roasted chicken. When you’re preparing the meat, add in some of our seasoning, using butter or olive oil to spread it around. Cook it up and enjoy!

Use it on Fried Eggs: Looking for a way to bring some flavor to your morning eggs? Everything bagel seasoning is the answer! While the egg is frying on the pan simply sprinkle some seasoning on top for the perfect added flavor.

Season Roasting Vegetables: Roasting some vegetables as a side dish with dinner? Sprinkle some everything bagel seasoning along with some oil, just the thing to add that little something to your greens.

Maximize Mac n Cheese: Before you add the top layer of cheese, add in some everything bagel seasoning in to take it up a notch.

Put it on Pizza: We all know that oregano is a classic seasoning for pizza, but you don’t have to stop there. Add some everything bagel seasoning to the top, or mix it in the crust if you’re making it from scratch.

Make an Olive Oil Dressing: If you’re making your own salad dressing and are low on ingredients, you can make a quick and easy dressing with everything bagel seasoning and some extra virgin olive oil! Taste the dressing as you’re making it to get the proportions are just right.

Add to Pancakes: Everything bagel seasoning on a pancake can taste similar to a bagel, but pancakes are easier to make on your own, and less time consuming. We’re digging this one on the weekends.

Toss in Trail Mix: Trail Mix is a great snack, but everything bagel seasoning is a nice way to make it more exciting. An extra savory boost to your mix!

Bloody Mary: Everyone loves a good Bloody Mary. Instead of putting salt on the rim of your glass, try everything bagel seasoning. It’s a great way to add some flavor to your drink.

Casertano’s Greenhouse in Cheshire, CT has been a leader in the wholesale greenhouse business for over forty years. Supplying a variety of products from perennials, perennial starter plugs, annuals, and ground covers.

Mapleland Farms is a pure New York maple syrup producer in Salem, NY. In 2015 Mapleland Farms LLC purchased 350+ acres of land, and today they tap over 900 trees!

Champlain Valley Apiaries is a 3rd generation Middlebury, Vermont family owned business. Founded in 1931 by innovative beekeeper Charles Mraz, they have been producing delicious Vermont honey for over 85 years.

Located in Warren, MA, Breezeland Orchards has been owned and operated by the Tuttle family since 1896, five generations! Through their practice of low ecological impact farming they enjoy reduced pesticide use, ensuring their products are safer and higher quality.

The McNamara family has been farming the banks of the Connecticut River in Plainfield, NH at McNamara Dairy since 1950. Today, there are three generations that live and work on the farm together, providing excellent care for the animals, producing high-quality products and being stewards of the land.
