Summer Camping Spots in the Northeast

One of the best ways to enjoy the summer weather is by connecting with nature at one of the many breathtaking camping spots the Northeast has to offer. We are proud to call this area home, with each state in our region offering amazing getaway opportunities. To help you with your summer fun we put together a list of some of our favorite camping spots in the area!

Lake Waramug State Park (New Preston, CT): In an area full of scenic lakes, Lake Waramug is wrapped with 77 campsites along its edges. You can even choose between overlooking the water or staying hidden in the trees. Either way you can enjoy fishing, picnic areas, swimming, and boating facilities with kayak and canoe rentals.

Savoy Mountain State Forest (Florida, MA): Tucked away in the beauty of the Berkshires, those who camp at Savoy Mountain State Forest are guaranteed to enjoy a lovely experience with nature. Featuring 46 campsites, and some of the best hiking in New England, campers can enjoy various outdoor adventures. Find floating bog islands, climb overlooks, and discover gorgeous waterfalls all at Savoy Mountain.

Chocorua Camping Village (Tamworth, NH): In the New Hampshire White Mountains sits Chocorua Camping Village, an all-inclusive, resort-style, family camping and hiking destination. You’ll be surrounded by beautiful lakes and giant pine trees. With access to resort amenities like a game room, movie theatre, swimming pool, and treasure hunts.

Moosalamoo Campground (Salisbury, VT): If you’re looking for a backwoods getaway experience that isn’t totally the backwoods, Moosalamoo is the place for you. Featuring 16 miles of hiking trails, the campground also offers drive-in tent camping, toilet facilities, accessible drinking water and trash disposal.

Glimmerglass State Park (Cooperstown, NY): Overlooking Otsego Lake, Glimmerglass State Park offers camping and hiking, biking, fishing, and picnicking. The campground offers a concession stand, nature trail, pavilions, picnic tables, showers, grills, volleyball courts, and even fire rings. Campfire wood is also sold at the park.   

Watkins Glen State Park (Watkins Glen, NY): Watkins Glen is considered the most famous of the Finger Lakes state parks. Offering 305 campsites with restrooms, dumping stations, showers, and firewood for sale. The park also features concession stands, a gift shop, picnic tables, and grills. And for entertainment, playing fields, an Olympic sized swimming pool, a kiddie pool, playgrounds, and 19 waterfalls. The park also offers fishing in Seneca Lake or Catherine Creek and hunting in designated areas.  

Greater Reading Campgrounds (Reading, PA): Camping in Reading exposes you to the natural beauty of the area. With the Appalachian Trail to the north and Amish Country to the southwest, the area offers several different terrains and adventures. Popular campgrounds include Sun Valley Campground in Bowmansville, Appalachian RV Resort in Shartlesville, and Mountain Springs Camping Resort in Hamburg.

Fruit Breakfast Pizza Recipe

Ingredients

2 whole-wheat pitas

4 tablespoons PICS honey

1 tablespoon water

¼ teaspoon PICS cinnamon

PICS nonstick cooking spray

Fresh fruit

1/3 cup cream cheese, room temperature

 

Step-by-Step Directions

Preheat the oven to 375 degrees.

Stir together 2 tablespoons of honey with the water and cinnamon.

Baste the top of the two pitas with the honey, cinnamon mixture.

Coat a baking sheet with nonstick cooking spray.  Place the basted pitas on the coated baking sheet.  Bake the pita crusts for 10 – 12 minutes; until toasted.

Remove the pitas from the oven and let them cool completely.

While the pitas are baking and cooking prepare the fruit;

  • Cherries: washed, pitted and cut in half or sliced.
  • Strawberries:  washed, hulled and sliced.
  • Blueberries:  washed and used whole.
  • Grapes:  washed and cut in half.
  • Pineapple:  skin removed, sliced and diced.
  • Kiwi:  peeled, sliced and diced.

Stir together 2 tablespoons of honey with 1/3 cup of cream cheese.

Divide the cream cheese mixture and spread it on top of each pita.  Add the prepared fruit on top.

 

OTHER FRUIT OPTIONS:  You can also use blackberries, raspberries, honeydew melon, cantaloupe melon, etc.

National Fried Chicken Day!

There are few things as American (or delicious) as fried chicken, and today on National Fried Chicken Day we want to give it its proper recognition. Fried chicken is an all-timer when it comes to comfort food, as good for your soul as it is for your taste buds. Whether you like hot and spicy or original and mild, we’ve got just thing for you!

Did you know that the Scottish played a major role in the birth of fried chicken? It’s surprisingly true! Scottish immigrants in the Southern states had a tradition of deep-frying chicken in fat. These immigrants often worked, lived, and ate with African slaves, who added some spices and touches of their own to the chicken. Eventually, many of slaves became cooks in the south, where fried chicken first became a staple.

The story begins with James Boswell, who wrote about the Scottish locals eating “fricassee of fowl” in his 1773 journal. Boswell described it as “fried chicken or something like that.” In actuality, he was talking about a dish in Scotland called Friars Chicken, not fried chicken, but this is where the recipe first got its name!

Although the very beginnings of fried chicken may remain a mystery, the first recorded recipe dates back to 1747. In a book titled “The Art of Cookery Made Plain and Easy” by Hannah Glasse she included a recipe called “To Marinate Chickens.” The book found major success in both the UK and the US Colonies.

Since its humble beginnings, fried chicken has become a foodie favorite. Now, different recipes and variations are popular in countries around the world. Serving Up Summer Seafood

Different Ways to Deviled Egg

Deviled Eggs are one of the best summertime appetizers and side dishes. Served cold, they are made to satisfy in the warm weather. The best part about these wonderful snacks is that you can get creative and prepare them almost any way you desire. Check out some of our favorite deviled egg recipes!

Start with a dozen hard-cooked large egg yolks. Mash them together in a bowl and add ½ cup of mayonnaise, 2 tablespoons chopped fresh chives, ½ teaspoon ground mustard, ½ teaspoon salt, and 1/8 teaspoon white pepper. To create different variants, divide the yolk mixture into smaller bowls. Each bowl for a different flavor combination.  

Italiano: Stir in pesto, add sundried tomato, pine nuts, parmesan cheese, and parsley.

BLT: Stir in bacon, add lettuce, tomato, and sprinkle some more bacon crumbles on top.

Cubano: Stir in ham and Swiss cheese, add pickle, stone ground mustard, and banana pepper. Sprinkle some ham crumbles on top.

Lucky Irish: Stir in corned beef and Swiss cheese, add Russian dressing and scallions. Sprinkle some corned beef crumbles on top.

Curried: Stir in curry powder, add some toasted pecans and chives. Sprinkle some curry powder on top.

Crabby: Stir in lump crab meat, add cocktail sauce, fresh jalapeño, and lemon zest. Sprinkle some lump crab meat on top.

Taco: Stir in guacamole, add pickled jalapeño, taco sauce, cilantro, and lime zest.

Asian: Stir in chili garlic sauce, add snap peas, sauteed shiitakes, and sesame seeds.

KCC Red, White and Blue Freeze Pops

4 PICS paper coated 5 oz. cups

4 Wooden craft sticks

10-12 fresh strawberries, medium to large, washed

1 cup fresh blueberries, rinsed
4 tablespoons PICS honey

1 teaspoon PICS vanilla extract
10 oz. PICS Greek vanilla yogurt

Cut the greens off the strawberries, and place into a mini chopper or food processor, along with 2 tablespoons of honey and ½ teaspoon vanilla extract. Puree. Evenly distribute the strawberry mixture into four paper coated cups. Place the cups in the freezer for 1 hour.

Remove the cups from the freezer and evenly cover the strawberry puree with 10 oz. Greek vanilla yogurt. Add a wooden stick to the center of each cup. Return to the freezer for an additional hour.

Combine the blueberries, 2 tablespoons honey and ½ teaspoon of vanilla extract in a mini chopper or food processor and puree. 

Evenly add the blueberry puree to each cup. Return cups to the freezer for several hours or overnight before serving.

Note:  This recipe makes 4 freeze pops.

Serves: 4

 

Ingredients:

  • 4 (2 ounce) Chicken cutlets
  • 4 Pineapple rings
  • 4 ounces Jerk chicken seasoning
  • 4 ounces Jerk chicken sauce
  • 8 ounces Coleslaw

Preparation:

  • Step 1: Rub raw chicken with Seasoning or Rub
  • Step 2: Grill chicken while basting with Jerk Chicken Sauce until done
  • Step 3: Grill Pineapple Rings
  • Step 4: Make or Purchase Coleslaw
  • Step 5: To assemble the sliders, place slider buns on plate with both sides open faced
  • Step 6: Place Jerk Chicken on the Heel Bun, then top Jerk Chicken with Coleslaw
  • Step 7: Place Grilled Pineapple slice on top of Coleslaw
  • Step 8: Place Crown Bun on top of Pineapple

30 mini Reese’s peanut butter cups

½ cup peanut butter M&M’s 

6 PICS graham crackers

¼ cup PICS chocolate syrup

48 oz. PICS Heavenly Hash Ice Cream

1 cup PICS mini marshmallows

24 oz. PICS Vanilla Bean Ice Cream

PICS canned whipped topping

Frosting:

1 cup PICS butter (2 sticks), room temperature

7.5 oz. jar of Marshmallow Fluff

2 – 3 cups PICS confectioners sugar

2 teaspoons PICS vanilla extract

Remove the heavenly hash ice cream from the freezer and let it slightly soften.

Cut the peanut butter cups into quarters.

Chop the peanut butter M&M’s in a mini chopper or food processor.

Break the graham crackers into quarters, and grind them into crumbs in a mini chopper or food processor.

In a bowl, stir the graham cracker crumbs and chocolate syrup together.

Spread the softened heavenly hash ice cream into an eight-inch spring form pan, filling it almost half way.

Remove the vanilla ice cream from the freezer to let it soften.

Create a center of the cake by adding half of the graham cracker mixture, ½ cup of mini marshmallows, half of the chopped peanut butter M&M’s and half of the Reese’s peanut butter cups. Pack the center ingredients gently into the ice cream, using a spatula or the back of a large spoon.

Fill the remainder of the pan with vanilla ice cream, and smooth the top with a spatula, spoon or butter knife.  

Place the cake in the freezer for approximately 3 hours.   

Before removing the cake from the freezer, make the frosting by whipping together the butter, fluff, confectioners sugar and vanilla extract with an electric mixer.

Once the cake has frozen, remove from the freezer and using a wet knife, loosen from the edges of the pan before releasing the spring and removing.

Frost the cake with the frosting. Add the remaining graham cracker crumb mixture, M&M’s, Reese’s peanut butter cups and mini marshmallows on top. Create a decorative edge with the canned whipped cream to help keep the candy topping in place.

Freeze the cake for at least an hour before serving.

Make Ahead:  You can make this cake one to two days before serving.

Leftovers:  Leftovers can be cut into slices and stored in an airtight container in the freezer.

Ice cream:  You can use any combo of chocolate and vanilla based ice cream that complement the candies.  There’s a wide variety of PICS brand ice cream at Price Chopper/Market 32.
