Our Homegrown Flavors events feature tastes from local communities, meet ‘n greets with local growers and producers and an overall celebration of all things local here in the Northeast. Each store will have a local brewery on hand to chat with guests and offer tastes of their New York brews! Our friends at DeCrescente Distributing are hosting a Bean Bag Toss competition outside our Shoppers World Market 32 – if you’re in the area stop by and challenge us to a game! For us at Cabot Creamery Co-operative, that tradition began in 1919 when a group of 94 farmers came together to bring their excess milk to new markets in a way they could as individual farmers. That spirit of hard work and cooperation remains at the core of Cabot nearly 100 years later.  The cooperative now includes 1,200 family farms spread across New York and New England. These farmers live in your local community. They serve on school boards and volunteer fire departments. Generally, you should choose about 5 -7 different cheeses, and accompany them with something sweet, savory, and crunchy. Some tips, tricks and twists to merit oohs and ahhs from your partygoers:
  1. Know your guests – are they into basics or excited to try new things? If you have a mix, plan on some favorites like aged New York cheddar, and something different like Red Apple Sriracha Cheddar.
  2. Consider a theme – all cow’s milk cheeses, or cheese from Italy, or cheese that starts with the letter “B” – it is fun and inspiring.
  3. Choose a range of textures and flavors – textures from soft to hard, and flavors from mild to intense. This is where the store cheese monger can be a great resource.
  4. Savories – charcuterie like prosciutto lends a salty-sweet element; olives or cornichons add a light vinegar kick to cleanse the palate.
  5. Sweets – dried fruit, fruit paste or preserve, fresh fruit like grapes or sweet cherries (in season!) are easy and their jewel colors decorate your cheese board. You can take it up a notch by roasting or grilling fruits – roasted grapes on the vine are easy, delicious and dramatic. Honeycomb is another sweet idea.
  6. Bread and crackers – Slice baguettes up just before your guests arrive. Or, drizzle with a good olive oil, and toast on a cookie sheet. Crackers are as diverse as cheese – look for multigrain types with seeds like sesame or flax, to bring in a nutty flavor that also has some nutrition benefits.
  7. Speaking of nuts – they are another way to put crunch on the board. Marcona almonds, toasted walnuts or pecans bring texture and taste.
  8. Cut cheeses ahead of time – use a wire cutter for soft cheeses like blue and brie, and a sharp knife for harder cheeses. Avoid cubing – they do not sit well on crackers or bread.
  9. Finally – summer food safety. Cheese should be served at room temperature, BUT -summer’s warm temperatures can impact the time you keep cheese out – experts recommend about a two hour time frame. If you see a sheen on the cheese, it is starting to lose fat and flavor. I love the ice filled trays that can be placed under plates and boards – consider using one to balance temperature on very warm days.

Ellie Wilson, MS, RDN  Senior Nutritionist Dairy farming is New York State’s primary agricultural industry. It is a tight knit community, and encompasses more than the farm families – dairy milk haulers, the tireless truckers that move milk from farm to plant, are also an integral and symbiotic part of this landscape. Husted Trucking, based a few miles from Terry’s farm, picks milk up from about 200 farms across a 50 mile radius. Thirty-two trucks and experienced drivers maintain this lifeline connection to plants and processors, with Chobani receiving a lion’s share of local milk. As part of our day, we met the company’s second generation owners, David and Penny. Their son, the third generation, is on the runway, working in the office while we learn more about their operation. milk cansDavid started working with his father hauling milk cans in 1953. Like farming, milk transportation gets no days off – no weekends, no weather can interrupt the schedule. Dairy farms are located on narrow, uneven back roads – drivers must be dedicated and very skilled, navigating through rain, sleet or snow. Drivers are also part of the quality and safety team – every milk load is tested. Drivers take samples from the farm holding tank, and the milk is tested again before it enters the plant to be sure there is no quality issue. The management team works with brokers to direct and deliver fresh milk orders that change daily. The trucks take milk to the plants, and the leftover whey back to the farms – a sustainable circle that promotes land and animal health. The truck are washed and sanitized after they deliver the milk to the plant. The whole system is regularly inspected– local, state and federal agencies all have a role. Regionally, farms collectively manage their food safety and must pass all inspections or they lose their market – their ability to sell their milk. All of these regulatory requirements ensure a safe supply chain from cow-to-cup. Commitment and collaboration rise like cream to the top of this discussion – David’s dedication to his team, longstanding working relationship and friendship with Terry, andTerryandDavid pride in their company’s heritage and role are evident. The boxes are always checked, the additional work done, the extra mile driven to protect their cargo and deliver it safely and efficiently to its destination. The hamburger has mysterious origins and started showing up on American’s dinner plates in the late 19th century. Part of what fueled the hamburger’s popularity was the Industrial Revolution, with more people working, there was an increased need for meals that could be prepared quickly. So what is it about hamburgers that draw the interest and taste buds of a nation? What used to be a simple meal of a ground beef patty stuck between two pieces of bread, has evolved into a dish that many strive to perfect. Take a look at the burger section of the menu the next time you go out to dinner. There are often so many variations that it’s often hard to choose which burger you want for dinner. It’s interesting to see how a meal that became popular over a century ago, more  out of necessity rather than flavorgourmet burger with blue cheese and sweet potato fries, still continues to captivate a nation. What appears to be a warm and beautiful May has me already searching the for the perfect summer recipes! Now what constitutes the perfect summer recipe? For me the perfect summer meal is something that’s really simple. I love a simple meal of grilled chicken with a side of grilled vegetables, but even though simple may be my favorite it can get boring every night of the week. For me summer recipes should be light, tasty, and hopefully they do not involve turning the stove on. So in my search for the perfect summer recipe I have stumbled upon a few that I know are going to become staples in my summertime recipe collection. Since there is a much wider variety of fruit in season during the summer months, I love incorporating strawberries, peaches and the like into my cooking as much as I can.
