| 2 med North Carolina Sweet Potatoes |
| 2 Boneless Chicken Breast Halves |
| 1 lb Chorizo Sausage |
| 1 lg Onion chopped |
| 2 clv Garlic minced |
| 1 can Whole Tomatoes and Juice (28oz) |
| 1 cp Garbanzo Beans drained, (15oz) |
| 1 tsp Paprika |
| 1 tsp Salt |
| 1 tsp Thyme |
| 1 tsp Pepper |
| 1/2 tsp Allspice |
| 1/2 tsp Cumin |
| 2 tbsp Tomato Paste |
| Fresh Parsley chopped |
Peel and dice sweet potatoes into 1-inch cubes.
Cut chicken and sausage into 1-inch pieces.
Combine in crockpot with remaining ingredients, saving out chopped parsley for garnish. Cover and simmer 4 hours on low heat, or until sweet potatoes are tender and chicken is cooked through.
