|2 med North Carolina Sweet Potatoes|
|2 Boneless Chicken Breast Halves|
|1 lb Chorizo Sausage|
|1 lg Onion chopped|
|2 clv Garlic minced|
|1 can Whole Tomatoes and Juice (28oz)|
|1 cp Garbanzo Beans drained, (15oz)|
|1 tsp Paprika|
|1 tsp Salt|
|1 tsp Thyme|
|1 tsp Pepper|
|1/2 tsp Allspice|
|1/2 tsp Cumin|
|2 tbsp Tomato Paste|
|Fresh Parsley chopped|
Peel and dice sweet potatoes into 1-inch cubes.
Cut chicken and sausage into 1-inch pieces.
Combine in crockpot with remaining ingredients, saving out chopped parsley for garnish. Cover and simmer 4 hours on low heat, or until sweet potatoes are tender and chicken is cooked through.
