Yield: about 30 bites
| 1/4 | cup | PRICE CHOPPER butter, softened | |

| 1 1/2 | cups | PRICE CHOPPER confectioners sugar | |

| 2 | Tablespoons | PRICE CHOPPER 1% low fat milk | |

| 1/8 | teaspoon | mint extract | |
|

| Green food coloring | |||
|
|
|||
| White chocolate morsels | |||
|
|
|||
| PRICE CHOPPER waxed paper | |||
|

Mix together the butter, confectioners sugar, milk and mint extract until smooth. Add 5 to 7 drops of food coloring and mix.
Cover a baking sheet with waxed paper. Using a spoon, drop small mounds (approximately 1 1/2- inches) of the batter onto cookie sheet and place in the refrigerator for at least an hour.
Once the batter is ready to be removed from the refrigerator, begin to prepare the white chocolate. Place one cup of white chocolate morsels into a glass bowl. Melt on high for one minute and then stir until the morsels are fully melted. Add four drops of green food coloring to the melted chocolate and stir until the cover is evenly distributed; repeat this step as necessary in the dipping process.
Roll the batter into small balls and then, one at a time, dip them into the green chocolate and return them to the waxed paper. Let the white chocolate set and serve.

Sprinkle the top of each Leprechaun Bite with green sprinkles.
