Combine all ingredients except butter in a large bowl. Heat a non-stick frying pan, griddle or electric griddle on medium heat and coat with a thin layer of butter or vegetable oil spray to prevent the pancakes from sticking. Cook the pancakes on low heat until golden brown on one side, flipping to cook the other side.
Added Pancake Fun:
Step One:
Let your children participate in the cooking process by having them draw a simplistic design (for example a snowflake, snowman, Hanukah candles, ornament) onto a piece of paper or have them trace a cookie cutter design onto a piece of paper.
Step Two: Spoon some of the batter into a cake decorating utensil with a metal writing tip; do not use a plastic tip due to the heat.
Step three: After you have heated and coated the griddle or pan you are using, use the batter in the decorating utensil to create a design in the pan. Let it cook for only 20 seconds before adding more batter on top with a ladle to create the circle affect of a pancake on top of the design. Let the pancake cook as usual, flipping to cook both sides until golden brown and serve.
The kids will love watching their design emerge as part of the pancake.
NOTE:
You can also add food coloring before placing the batter into the decorating utensil for a colorful affect.
