Cut the caramel wraps into one inch strips using either kitchen scissors or a pizza cutter. If you want to let your kids cut the caramel wraps, I suggest using a pizza cutter or knife to make indentations in the caramel first for them to follow so that you have enough strips at the end of the process.
Starting at least two inches from the top of the pretzel, wrap the caramel strips around the pretzel so that the entire pretzel has one layer of caramel except for the exposed top portion. Set the caramel wrapped pretzels onto a wax paper-lined cookie sheet and set aside.
Pour chocolate morsels into a tall glass and microwave on high for one minute. Stir until morsels are completely melted. Dip the caramel covered pretzel into the chocolate leaving a 1/4- inch of the caramel exposed at the top. Set the pretzel back onto the waxed paper and coat with a thin layer of colored sprinkles. Once all of the pretzels have been dipped in chocolate, refrigerate to set. Keep the pretzels in cool storage.
