Snowballs

Yield: about 43 cookies

Ingredients

1 pkg (16 oz) PRICE CHOPPER creme filled cookies
1 1/2 cups PRICE CHOPPER confectioners sugar
1/4 cup PRICE CHOPPER butter, softened
2 Tablespoons PRICE CHOPPER 1% low fat milk
1/2 teaspoon PRICE CHOPPER vanilla extract
1 ounce PRICE CHOPPER low fat cream cheese, softened
2 mint candy canes
2 pkgs (12 oz ea) white chocolate morsels
Optional: sprinkles

Directions:

Crush the creme filled cookies by either placing them in a food processor or by hand in a zip loc plastic bag; set aside.

Separately, crush the two candy canes, preferably in a food processor if possible so that it makes a peppermint sugar like substance. An alternative would be to place the candy canes in a plastic zip loc bag, making certain all of the air has been released, and roll over them with a rolling pin. Set aside.

In a separate bowl mix together the confectioners sugar, butter, milk, vanilla extract and cream cheese. Add in the crushed candy canes and crushed cookies. Beat until all of the ingredients are mixed together thoroughly. Create one inch balls from the batter and place onto a cookie sheet lined with waxed paper.

Pour the white chocolate morsels into a glass bowl and place in the microwave on high for one minute. Stir the chocolate so that all of the morsels melt. Dip the cookies into the white chocolate so that they are completely covered and place them back onto the cookie sheet. Before the chocolate sets, add sprinkles if desired. After all of the cookies have been dipped, place them into the refrigerator to set. Keep the cookies in cool storage.
