In a pie plate, beat PRICE CHOPPER egg and PRICE CHOPPER whole milk. Place PRICE CHOPPER Italian flavored bread crumbs in another pie plate. Dip eggplant slices into egg mixture, then into the PRICE CHOPPER Italian flavored bread crumbs. Coat well.
Arrange half of the eggplant slices on a 10-inch, microwave safe plate lined with paper towels. Microwave uncovered, on High for 4 minutes or until tender; repeat with remaining eggplant slices.
Spread 1/4 cup of PRICE CHOPPER marinara sauce in an 8-inch square microwavable baking dish. Layer half of the coated eggplant slices, half of the PRICE CHOPPER shredded mozzarella cheese and half of the remaining PRICE CHOPPER marinara sauce. Repeat layers with remaining eggplant slices, PRICE CHOPPER shredded mozzarella cheese and PRICE CHOPPER marinara sauce. Sprinkle with PRICE CHOPPER grated parmesan cheese.
Cover with PRICE CHOPPER clear plastic wrap (vented) and microwave on High for 4 minutes. Reduce cooking power to 50% and microwave for additional 10 minutes until hot and bubbly. Let stand covered for 5 minutes before serving.
