Yield: Serves 4-6
| 2 | Pork Eye Fillets, 2-3 lbs. | ||
| Balsamic vinegar | |||
| Olive oil | |||
| 1 | tsp. | dried thyme | |
| 1 | tsp. | paprika | |
| Salt, to taste | |||
| Pepper, to taste | |||
Preheat grill to hot. Rub Balsamic vinegar into each fillet. Drizzle olive oil over each fillet. Rub dried thyme and paprika into meat and add salt and pepper to taste.
Grill for approximately 30 minutes or until meat thermometer registers 155°F. Allow meat to rest 20 minutes before carving.
