Steamed Lobster Tails

Ingredients

8 oz. lobster tails
12 stick butter, melted
1 lemon, quartered
Salt, pepper to taste
1 tsp. Paprika

Directions:

Cut through the top shell of thawed tails to the flippers. Spread the shell open. Pull flesh out and arrange on top of the shell. Season with salt and pepper. Brush with melted butter and sprinkle with paprika. Place on a rack in a pan containing a small amount of water or white wine. Cover and steam just just until flesh is firm and opaque. Tails should be ready in 2-3 minutes. Serve with melted butter and lemon.
